This top-drawer Bourgogne is drawn from two estate-owned sites in the southern reaches of Chassagne, near Chagny and Remigny. The soils are the classic clay and limestone of the Côte, and the vines are 35 years old on average. The grapes were handpicked and mostly destemmed before natural fermentation. The wine matured for 12 months in a mix of steel vats and large used barrels. Pillot employs roughly 50% bunches for this wine for structure and perfume—a surprising quantity for this level (until you taste the wine). Producer Profile

Paul Pillot is a producer of its generation, producing wines of great clarity, purity and tension. The quality of his holdings in Chassagne is eye watering and the wines, funnily enough, are mouth watering. 13 hectares is quite a significant domaine, and yet they have become so adored by the restaurant trade in particular, that allocations are smaller than ever.

The style of the wines has evolved over the last twenty years or so, reflecting regional trends towards shorter elevage, a diminution of new oak and earlier picking. The domaine’s reputation rests on its whites and yet their pinots have come a very long way indeed. Like the whites, they certainly occupy the contemporary ground, with virtually no new oak, short aging, high percentages of whole bunches and lighter colours. Freshness, energy, clarity and tension are what the estate aims for and for all their vibrancy, there is an incredible sense of effortless power and ethereal grace.
