From younger vines in the same Castelletto terroir, the grapes were de-stemmed and given a 24-hour cold-soak for bright fruit retention and softer tannin. The wine was fermented in stainless steel, before 12 months in large oak barrels. Rather than being a ‘Baby Barolo’ style, this has a firm identity of its own.
