‘My vocabulary defaults to words like fragile and brittle, but it’s not right. Neither sinew, nor high pitched do this wine justice. It’s like porcelain; translucent, strong, beautiful and pure. Don’t make the same mistake I did and drink this straight from the fridge, it’s too cold. This wine is reluctant when it’s 4 degrees, a reluctance that becomes confidence as it warms slightly. The colour of the wine has the slightest green hint, otherwise bright and clean. The nose smells of chalky soil struck pebbles and a saline citrussy note too. As it warms in the glass it seems to stand 2 inches taller, it shows ginger, apple, cinnamon and vanilla.
The fruit is sleek and persistent. It’s neither jammy nor too restrained. It tastes like a cool glass of Chardonnay in the white stoned town square in Meursault, but of course, it is more unique than that. Whilst Burgundy has hundreds of wineries, the little hamlet of Bannockburn, in the outskirts of Geelong might count as many as 5.’ Ben Knight for Nick Farr

Preserved lemon, jasmine, brioche, green mango, lime, pineapple and apricot rise from the glass. Dense and almost full-bodied for Chablis, yet beautifully crystalline, with piercing focus, serious depth and an effortless flow. The palate layers yellow peach, grapefruit, lime, marjoram, tarragon, fresh hay and apricot, with a succulent, juicy texture that makes it immediately approachable […]

From a 12-row block of P58 clone planted in ’76. Matured in French hogsheads and puncheons (40% new); 70% mlf. A very bright green gold. Interestingly, this is the most restrained and subtle of Bannockburn’s ’25 chardonnays, and, no surprise, also the most complex. Aromas of perfectly ripened stone fruits, orange pith and lemongrass precede […]

Entirely from a single block, two clones of Chardonnay were sourced from Block 4, which resides on an east-facing slope with views back towards the Clarence House homestead and Mt Rumney. Picked in the first days of April, whole-bunch pressed and allowed to ferment wild in a combination of tank and old French oak puncheons. […]

From the Full Moon vineyard in Gladysdale, which, sadly (and in a sign of the times), has been pulled out by the owner. Salo has another vineyard lined up for ’26. In the meantime, this is an excellent way to go out. Brightly coloured with aromas of nectarine kernel, citrus peel, flint and light marine […]
