Very light colour, with a very subtle blush or taché, the aromas are fresh and mostly primary, with suggestions of iced pastries and brioche, and in the mouth it’s full and rich with quite marked acidity that drives the super-dry aftertaste. It certainly cleanses the tongue, and would be refreshing with lighter foods, especially oysters natural. A cracking sparkling blend of 95/5% pinot noir/pinot meunier sourced from Chartley Estate in the Tamar Valley, with just under 5 years’ tirage. Pale straw with a vivid, fine bead and mousse and characters of crunchy apple, lemon and grapefruit with hints of clover blossom, sea spray, crushed stone and shells, enoki mushrooms, fresh pastries and ozone. Dry and long in flavour with a scintillating mineral cadence and just a lick of umami. Jeez, this is wonderful, energetic drinking. 96 points, Dave Brookes – Halliday Wine Companion

After a decade at Petaluma, Peter Dredge moved to Tasmania in 2010, spending five years as chief winemaker at Bay of Fires before launching Dr Edge in 2015. Focused on cool-climate Tasmanian Chardonnay and Pinot Noir – still wines and traditional method sparkling – the project sources fruit from select sites, including the Coal River Valley.
