Barossa Valley Cabernet is one of our great underrated wine styles. Curator’s effort is very cabernet and as it should be, very Barossa. Deep and vibrant colour, with soaring, glorious aromatics of black fruits, lavender and wood spice. Full bodied, full of vigour and strength, with savoury herbs, licorice, camp fire, creme de cassis, dark cherry, blueberry and hedge fruits. Full of freshness and pert tannins. Marananga-sourced here. 100% whole berry ferment for 10–12 days then basket pressed into French oak (15% new) for 16 months. Loaded with rich blackberry, black cherry and blackcurrant fruits with hints of licorice, briar, tobacco, cedar, créme de cassis, earth and dried herbs. Full bodied with some blackcurrant pastille notes, superfine, chalky tannins and a bright seam of acidity. 93 Points, Halliday Wine Companion

 

If you love full-bodied cabernet, this is for you. A ripe style of fleshy, spicy black/redcurrants and cassis. Bright acidity, finely structured tannins, vibrant blueberry fruit and dark chocolate and coffee oak make for impressive balance, undeterred persistence and considerable integrity. With plenty of ripe blackberries, some raspberry and even violets, this perfumed wine has softly integrated oak and an elegant finish. More of a Shiraz drinkers Cabernet! Bottled unfined and unfiltered and is Vegan friendly. 

 

This Barossa Valley Cabernet Sauvignon was hand-picked and had a two-day cold soak then naturally fermented using indigenous yeasts. The ferment was hand plunged three times daily for approximately ten days. Then basket pressed and filled into French (15% new) and two year old USA oak for three weeks barrel fermentation followed by 18 months maturation. Producer’s Notes
