At Domaine Tempier, grapes from different vineyards are skillfully blended to create this wine, made up of between 70 and 75% Mourvèdre (depending on the year) combined with Grenache, Cinsault and a hint (2%) of old Carignan.
Clusters are hand-selected in the vineyard and in the cellar; de-stemmed, crushed and put into concrete vats for 3 to 4 weeks to ferment naturally with indigenous yeasts. Elevage is for 18 months in large old foudres
Usually my favourite wine in the range and one for those in any doubt about the efficacy of blends. A 60/40 blend of Grenache and Shiraz.
