The grapes are harvested by hand, sorted again in the winery and destemmed. Without pumping, the grapes go into their wooden fermentation vats, the “cuvees”, with a proportion of whole grapes that have not been destemmed. After a short maceration period, the mash ferments spontaneously with natural yeasts. Matured in new and used barriques, filled unfiltered.
