A wine of formidable presence and understated power, Tout Prés is born from one of the estate’s most remarkable sites. Planted in 2001 at 7,300 vines per hectare, this densely planted vineyard rises above its neighbours, its three distinct slopes spanning black volcanic soils over limestone, quartz gravel and red ironstone, and iron-rich grey sandy loam. The result is Pinot Noir of extraordinary depth, complexity and structure.
Fermented with 100% whole bunches in a five-tonne oak fermenter and matured in 100% new French oak from Allier, Tout Prés has the concentration and architectural integrity to absorb its élevage without losing sight of its origins. Expect layers of dark cherry, wild spice and earthy minerality, framed by fine, commanding tannins and a long, unfolding finish. There is richness here, but never excess; power, but never weight. Its signature is the interplay of intensity, precision and restraint.
A wine of quiet authority and exceptional longevity, Tout Prés is the peacock’s tail in full flight: expansive, composed and unmistakably iconic.

Grapes from seven different vineyards spread across Shaw’s Ridge, Hemel-en-Aarde Ridge and Elandskloof. Approximately 50% whole-bunch fermentation. Matured in mainly older 228-litre barrels. Enticing aromatics of red and black cherry, orange, floral perfume, fynbos, earth and white pepper. The palate shows juicy fruit, big acidity and pleasantly grippy tannins. Remarkably deft, particularly given the sizeable […]

Despite the light colour, pouring the wine releases an immense bouquet. I know we’re in for a treat! Expressive and vibrant with plum, cherry, raspberry, blackberry and five spice. Deep, succulent and complex and so much presence and grip. Tannins are very fine, that seem to tighten towards the close. Scaffolding acidity, with the length […]

Direct from the cool dark cellars of Rippon, and at 10 years old this is drinking beautifully. It’s interesting to taste the estate’s DNA, with no perceptible style changes over the years. As always, an expression of vintage, and 2012 is considered great according to Nick Mill, owner/winemaker at Rippon. Red fruits, cherry, plum, strawberry, […]

From a single vineyard in Yellingbo in the Upper Yarra; 20% whole bunches, 20% new oak. Medium bright crimson. Fragrant and spicy aromas of red and black fruits, rose bush and a touch of allspice. The fruit has thoroughly swallowed up the oak. Medium bodied, with excellent depth and very persistent, fine-grained tannins. Finishes long. […]
