Without doubt, the finest Saperavi in Australia. Made traditionally in Amphorae, left on skins for 180 days and a small dash of Sulphur the only addition. Yet despite this, the tannins are silky and the fruit vivid and fresh. Deeper than the 2020, brooding, with blackberry, mulberry, plum, blackcurrant and raspberry. There’s a ferrous element too, a feature of the varietal, gentle spice and cut flowers. Round in shape, the acidity buoyant and those lovely sensuous tannins. Just beautiful. Waters Wine Co
