“Pale in colour, prettily toasty on the nose, alongside the clean white fruit, balanced, with energised apple fruit yet still with some flesh to provide the body.” 88-90 Points – Jasper Morris, Inside Burgundy

Paul Pillot is a producer of its generation, producing wines of great clarity, purity and tension. The quality of his holdings in Chassagne is eye watering and the wines, funnily enough, are mouth watering. 13 hectares is quite a significant domaine, and yet they have become so adored by the restaurant trade in particular, that allocations are smaller than ever.
The style of the wines has evolved over the last twenty years or so, reflecting regional trends towards shorter elevage, a diminution of new oak and earlier picking. The domaine’s reputation rests on its whites and yet their pinots have come a very long way indeed. Like the whites, they certainly occupy the contemporary ground, with virtually no new oak, short aging, high percentages of whole bunches and lighter colours. Freshness, energy, clarity and tension are what the estate aims for and for all their vibrancy, there is an incredible sense of effortless power and ethereal grace.
Stunning aromas of pear, yellow stone fruits, and baked apple. There is heaps of complexity with hints of flint, smokey oak and toasted almonds. The palate is refined and textured; stone fruit and citrus flavours dominate. It is so light and airy with a lovely thread of cool acidity to it.. Flavours last for a […]
Add to cart Producer: Dappled WinesFrom 0.51 ha of vines in 2 separate plots planted 1993 and 1965, one in the steepest stoniest part close to Blagny which contributes excellent acidity and structure, the other part is from lower down where the soil is richer and this part gives greater richness and depth to the wine. This shows wonderful intensity […]
Add to cart Producer: Jean-Louis ChavyScrewcap. Unusually for a Petit Chablis, which generally comes from the lower-lying sites on Portlandian limestone, the lion’s share of this cuvée is drawn from a parcel of Kimmeridgian-based soil. Yet it’s not necessarily the type of limestone but more the location that makes the difference. The small Defaix parcel is well situated on the […]
Add to cart Producer: Bernard DefaixThe lieux-dit of Les Chevalieres is situated above the village of Meursault. Above is the lieux-dit of Les Luchets, which produces a higher toned, more tensile wine. I can’t help but think that this is ideally situated, in a sense, mid-slope, the perfect aspect in Burgundy. Impossibly complex, with notes of white flowers, lemon, lime, […]
