Dappled ‘Appellation’ Chardonnay 2023

This wine has a gorgeous nose of orchard fruits, smoke and hints of spice. The palate is rich, fine and succulent. Yellow peach, citrus, figs, nuts and lovely spicy oak flavours. Absolutely spot on. A Chardonnay for all palates and occasions. 

The 2018 Appellation from Dappled is true Yarra Valley Chardonnay, from upper and lower valley vineyards. Super traditional winemaking. The fruit is hand picked and cooled overnight before whole bunches are crushed by foot. The juice is lightly pressed before being transferred to (20% new) French oak Barriques, Puncheons and Demi-Muids. Wild fermented and left on lees for 10 months. Sulphur is used minimally. The wine is lightly filtered and bottled unfined.
