Sourced from two chardonnay (49%) and two pinot noir (51%) blocks and aged for 60 months on lees. A very fine and serious sparkling with apple, citrus blossom, lime, pear and savoury spice. Compact, intense and very bright. with mingling Mint, sage, and salt notes, mingling with citrus and stone fruits. Quite structured, with driving acidity and a touch of mouth-watering grip. Norris at Waters Wine Co
53/32/15% pinot noir/chardonnay/pinot meunier based on the 2017 vintage with 14% reserve wines. Disgorged in October 2018; 4g/L dosage and 72 months lees ageing. White peach, pomelo skin and nashi pear. Cider apples, cherry blossoms and crushed chalk. Calippo-like freshness. Mouth-watering acidity with a wash of white stone minerality and sea spray. Plenty of tension and precision here, with a real pureness to the orchard fruit. 96 points – Shanteh Wale, Halliday Wine Companion
