Sparkling or Champagne that spends this amount of time on lees, 90 months in this case, can have too much savouriness and leesy-ness, without enough freshness or fruit. However, the Daosa Blanc de Blancs is gorgeous, mineral, generous and intense, without any loss of freshness or fruit profile. It’s a remarkable feat in sparkling winemaking and a testament to the quality of the fruit coming off the Bizot site. Honeycomb, spring jasmine, ginger biscuit, white and yellow peach, toasted almonds, cooking spices and apricot marmalade. Silky, fine and long, perfectly balanced and with a sense of effortlessness, with nothing forced. Unlike so much Grower Champagne, it doesn’t try too hard. If it’s a statement of sorts, it’s pure, drinking pleasure.
From a single site – the Bizot family vineyard. All chardonnay. Barrel maturation employed. A foamy texture belies the detail of fruit, spice, savoury oak seasoning and freshness here. Summer fruits, biscuits and bread, toast and cinnamon and honey and marshmallow and ginger. Intense, saline acidity and bristling, tight and fine bubbles. A little glossiness of intensity even with the freshness. It’s rich but lively, coursing with energy and yet shows off the mature fruit and secondary characters so well. A kaleidoscopic experience, per se. Just straight-up fantastic, and a world beater. 96 points – Mike Bennie, Halliday Wine Companion

Daosa is the sparkling wine project of Xavier Bizot and Lucy Croser, and a meeting point between two remarkable wine families.
Xavier grew up in Champagne as part of the Bizot family, while Lucy is the daughter of Adelaide Hills pioneer Brian Croser. Together they established Terre à Terre and, in 2009, made their first Daosa from the family’s high-altitude vineyards in Piccadilly Valley.
The choice of site was deliberate. At around 500 metres elevation, Piccadilly Valley offers the cool climate, long growing season and natural acidity that sparkling wine demands. Chardonnay and Pinot Noir thrive here, producing fruit with both delicacy and intensity.
Daosa is made with the same rigour applied to the best traditional-method sparkling in France: hand-picked fruit, whole-bunch pressing, careful selection of the finest juice and extended ageing on lees. The Natural Réserve also incorporates reserve wines matured in large, old foudres, adding depth and complexity without compromising freshness.
But Daosa is not an attempt to recreate Champagne in Australia. It is a distinctly Australian expression of traditional-method sparkling, combining French technique with the character of one of the Adelaide Hills’ coolest and highest sites. The result is sparkling wine of remarkable precision and finesse – bright, mineral, textural and built to age.

Light straw-yellow tone with a fine bead showing. Poached granny smiths, crushed raspberry and baking brioche aromas. Palate fills with apple and berry fruits while a deep maturity shines through towards the finish with notes of warm sourdough and warming toffee. The acidity carries it well, lingering in the background, allowing the fine bead to […]

Pinot Meunier (66%), Pinot Noir (30%) and Chardonnay (4%). The Pinot meunier really shines, with very open aromatics of strawberry, cinammon, raspberry, sandlewood and Scotch Finger biscuit. Rich, full bodied, soft, open and creamy. As with all Daosa sparklings, some extract and texture to fill and grip the palate, which is very long, flecked with […]

A wonderful interplay of flavour, texture, salt and spice sensations. Lemon and limes, white flowers, white peach and pear, with a saline and subtle peach skin texture driving the finish. For all its freshness and vivacity there is terrific volume. A wonderful release. Waters Wine Co Our 2025 Gamburra white Ancestral method sparkling wine […]
