Made exclusively from superb Grand Cru vineyards (predominantly Ambonnay, and also Bouzy and Verzenay). A blend of 70% Pinot Noir and 30% Chardonnay from low-yielding, perfectly tended vines, harvested fully ripe. Natural fermentation with wild yeasts only. The first period of maturation (before going to bottle) lasts almost one year, the wine remaining on its fine lees. No fining or filtration. Over 50% of the wine was fermented and aged in oak casks. The dosage is three grams per litre, so Extra Brut territory.
