The real excitement in Champagne is from the small artisan producers in Cotes des Blanc. Charles and Emmanuel Fourny from Vertus are at the forefront of that excitement. They produce fabulous Cuvees of ridiculously good quality. This is beautiful Champagne from salt of the earth, hard working people and as good as it gets for the special moments.
Hand-picked. The immaculate fruit is gently pressed and fermented in small oak casks. As the juices are transformed into wines, they rest quietly in the underground chalk cellars until the following spring. The wines undergo ‘battonage’ or lees stirring to encourage the lees to release some of their lovely aromatics. On tirage for 4 years. Dosage is 3 grams / litre (to taste).
Opulence and smoothness: a great Blanc de Blancs gourmet champagne, for exceptional dishes. White truffle is the best tribute you can pay it. Great ripe soft cheeses would also be a perfect partner.
