Lifted aromatics of blackcurrant, blackberry, tobacco, cherry, mint and sandalwood. A thoroughly classic Margaret River Cabernet, it’s seriousness a statement of intent. The tannins provide shape, structure tertiary flavours, very much defining the wine at this early stage. Firm and authoritative, the fruit pure, black and hedge. Oyster shell, soy and tobacco notes are prominent as are the rugged, gravelly tannins. Acidity is vibrant, buoyant even, freshness and lift despite the evident power. Cabernet off the Sheaok Vineyard, and it’s a beauty (although it comes in a way-too-heavy bottle about 1.5kg when full). No complaints about the flavour profile of blackberry essence and cassis, cedary oak spices and toasted nori, black olive tapenade and menthol. It’s fuller bodied with a ping of lively acidity, and the tannins are lovely – ripe yet with a cocoa-powder texture.
