The benchmark Australian dessert wine and 2019 is a standout vintage. Made with parcels of fruit from selected vineyards, each batch of grapes is harvested, fermented and matured separately to capture the individual characteristics each plot produces. The vineyards include the Chauncy block of Semillon, which was the last vineyard of Semillon for Botrytis that Deen De Bortoli planted. Also the Cercone block of Botrytis Semillon, which is one of the original blocks used for Noble One. Pale golden in colour with an explosion of stone fruits, yellow peach nectarine apricot and citrus. Deep golden colour. The bouquet is rich and toffee-like, with some oyster-shell and seaside, ozone overtones. Toast and vanilla later—a subtle trace of oak barrel. The wine is quite sweet and fluid, without quite the oiliness of the more heavily botrytised wines. The finish is dried by a touch of tannin.
