Made in a feinherb style, well almost, as the sugar is barely noticeable due to the very high level of acidity. Lemons, limes, grapefruit green apple and salt. The citrus is of fresh juice, preserve and zest and as such, is quite linear in style. Mouthwatering and bracing, it will be fascinating to see how this ages. Waters Wine Co

100% Riesling from the limestone-based Pressing Matters Vineyard in Richmond, Coal River Valley. The fruit was hand picked and whole bunch pressed to tank, with the fermentation arrested at the optimum acid/sugar balance. The wine was racked to one 2000 L egg shaped concrete vessel for 6 months maturation on fine lees. Bottled unfined, so vegan friendly. 12.5 % Alc/Vol; 6 g/l RS; 3.05 pH; 8.9 g/l TA.

Producer Profile

Bubb + Pooley is a new wine venture created by the husband and wife winemaking team of Justin Bubb and Anna Pooley. Their first and subsequent releases were produced from purchased fruit sourced from carefully selected vineyards in the Coal River Valley and the East Coast of Tasmania.

Sustainability and minimal impact underpin the approach at Bubb + Pooley – the fruit is hand-picked and there is minimal added sulphur to facilitate wild-yeast ferments and natural malolactic conversions. The wines are fermented in hand-crafted concrete vessels specifically designed to enhance the varietal.

All wines are bottle unfined and so are vegan suitable.
