Toolangi’s 2018 Shiraz is a finely drawn, cool climate shiraz with a floral perfume of violets, cassis, raspberries and dark cherries. There’s also a hint of restrained oak, spice, pepper and charcuterie. It’s long and elegant, with a pristine core of dark berries, plums and cherries tightly knit with gentle oak. Ably supported by fine, dusty tannins. It finishes savoury, with a refreshing acidity.
Hand-harvested and naturally fermented. 25% whole bunches in both open fermenters and closed statics. The wine was then matured in French oak hogsheads and puncheons for six months. A small portion (10%) was new oak with a small portion also kept in tank for freshness.

Black pepper, black cherry and leafy spice notes run into full-blown stem and green herb characters.
