22.5% whole bunch foot trod, remainder destemmed whole berry and chilled on top. After 5 days of cold soak plunging, indigenous ferment took off and one plunge and one pump over were undertaken daily until about 3 Baume. From here just plunging managing the tannins which were prominent early this year. 13 days on skins, pressed to tank, settled and racked with fluffy lees to a mixture of mainly puncheons at 16 yrs old with one new hogshead for natural malo. 10 months maturation. Bottled with minimal sulphur only in early February 2021. Vegan friendly.
