The 2020 is a classically silky Pinot Noir from Mount Macleod. A delightful mix of red fruit, spice and forest floor savouriness. 2019’s ferments had a greater proportion of whole bunches (20%) than usual. This enabled a shorter extraction period due to good early tannin pickup. Juicy and delicious! This is excellent value, aromatically complex and elegant Pinot Noir.
Cropped from dry grown, organic vines (on deep Gippsland Ferresol). Fermented naturally. One fermenter inoculated with a Pied de Cuve made the previous day. Raised in a mixture of stainless steel (with a long post ferment maceration) and old wooden barrels that have previously housed the Caledonia Australis Pinot.
