The Foothills Pinot Noir is hand harvested from a selection of rows from the Silverwood vineyard. Vineyard established 1998, managed by Kerri Greens since 2016. Fully destemmed directly to bins by gravity, as softly and slowly as possible, no crush. Berries were left undisturbed until fermentation naturally began 4 days later. Plunging took place once daily, two times over the couple of days that the ferment was at its peak. 17 days on skins then pressed to tank. Matured in a mix of old and new French puncheons. Bottles unfined and unfiltered.
