Late harvest usually usually implies a desert wine, which is true in this case. However, similar to a German Spatlese riesling, you could match this with richer savoury dishes too. Fermented slowly, through late Autumn and into winter, stopping naturally when the winery is covered in snow and is too cold to carry on. Star Jasmine, lime, kumquat, ruby grapefruit and honey. Beautifully fresh palate, salty, tangy and full of zing, the citrus fruits fresh and rich. White peach, apricot, plum, cherry and tin peach round out the palate, interwoven with bright acidity and the faintest of texture. Utterly moreish and compelling drinking. Waters Wine Co
