The Hunter Vintage of 2017 was an excellent growing year for both whites and reds – this Semillon benefitted from very dry conditions, with an abundance of sunshine while the fruit was on the vine. The whole bunces were destemmed and crushed then put through a soft ‘champagne’ pressing cycle to get the purest, freshest juice. Blended and bottled without fining or malolactic fermentation. A tight and bright core of green and yellow citrus; lemon and freshly-cut green apple at its centre, plus guava, pineapple, and lime all packed in with aromatic hints of Nashi pear. At 10.5% alcohol the varietal lemon zest flavours reign supreme, with delicate juicy ripeness from start to finish. The acids are gentle yet fresh, generating a satiny texture and softness like white figs, providing crunchy flavour length and vibrant persistence.
