Made in a pure-fruited, medium bodied style that takes its inspiration from Burgundy rather than northern Italy or Alsace, this finely weighted Gris is drawn from a south-facing site in Merricks. The fruit was hand sorted in the vineyard and winery, then whole bunch pressed into old barriques to ferment (on high solids) using indigenous yeasts. The wine only goes through partial malolactic, to preserve freshness, and was matured on its lees in old neutral barrel for six months. For the first time, a small proportion of 100% carbonic fermented Pinot Gris was included in this vintage. Juicy Bosc pear scented with wild honey and brown spices. The palate is mouth-watering and defined with succulent stone fruit, fennel and preserved lemon flavours tapering to a crisp, chalky close.
