This wine has spent 3 years under flor, hence sous voile. Utterly unique and mind bendingly complex. Aromas, of seaweed, walnuts, butter, spice and limes. But it’s the palate that sets your senses racing. Fleshy and juicy, but with real textural grip. Almost bitter, but not. Fine, elegant, with a cutlass of mineral, briony acidity that thrashes and cuts the fruit of lime, mandarin, grapefruit and orange. Very, nutty and leesy with burnt butter. This all sounds ridiculous, but it’s amazing and hard to describe!
