Farr Rising Garganega 2025

This is the first release of Farr Rising Garganega.  This is the 4th year this wine has been produced, but prior to now it has been solely consumed by the team at Ipsos Restaurant.

Due to the Farr’s love of Soave and the desire to drink their own wine, Garganega was planted.  It sits on a north facing slope atop grey sandy loam, with underlying limestone and an ironstone base.  The wine is naturally fermented, 50% occurring in tank and 50% in 1 year old oak barrels, before being bottled 10 months later.  The choice to split the ferment between tank and barrel allows for a refined acidity, whilst continuing to develop complexity.  I hope you enjoy this work in progress.  Don’t be shy, have a try! Farr Rising Saignee Rose 2025

The 2025 Farr Rising Saignee returns with its familiar salmon pink hue and complex oak characteristics. Playful on the nose with ripe tropical fruit, and a rounded nutty aroma to draw you back in. The palate is both soft and refreshing, to be enjoyed equally with food or without. The wine is ready to be enjoyed now or cellared to develop in years to come.

“Saignee”, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in the tank for 2-3 hours before bleeding the free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolactic fermentation. The wine is placed in four- and five-year-old barrels for 10 months before being filtered and bottled. Nick Farr

 

Farr Rising Gamay 2025

Deep, dark, and vibrant in the glass. The nose is intense — dark spice, a punch of salinity, savoury herbs and graphite. Beneath the assertive opening sits a perfumed musk and confectionary lift that hints at carbonic maceration. A second pass reveals brown spice — mace and clove — alongside ripe Christmas cherries. The palate delivers summer berries and cream, with a supple texture and generous weight that sets it apart from many examples of the grape yet remains true to its varietal character.’ Nick Farr

 

Farr Rising Pinot Noir 2024

Ripe, generous, and rounded, this Pinot Noir delivers a depth and intensity regularly seen from this site. Dark spice and ripe black fruits take centre stage — no herbal edges, just a confident savoury expression. It’s powerful yet entirely seductive, in the way only Pinot Noir can be. That allure comes from balance: though this is a big wine, it remains perfumed and fresh, never overbearing.’ Nick Farr
