From a plot adjacent to the premier cru Les Butteaux, facing south-east. Fermented and aged entirely in stainless steel, on fine lees with regular batonnage. This is ideal Chablis for me, expressive elegant and cool, bright, vivid and with no hard edges. Lemon, lime, orange blossom, gardenia, brioche and mandarin. Elegant, medium bodied, pulpy and detailed. Lovely soft texture, cut through with minerals, and green olive acidity. Quite lovely. Waters Wine Co

 

The 2018 Chablis Cuvée de la Butte is a success, revealing pretty aromas of citrus oil, grapefruit, white flowers and oyster jus. On the palate, it’s medium to full-bodied, ample but stony, with racy acids and a saline finish. 90 points, William Kelley, The Wine Advocate

 

Diam. This cracking villages bottling comes from a parcel of vines located close to the 1er cru Les Butteaux (prompting the cheeky name which literally translates to “wine of the hill”). These vines are situated on a sudden slope with very chalky soil, rich in white clay. As with each of Verget’s Chablis, only the free run juices were vinified, in this case, 95% in the domaine’s bespoke horizontal stainless-steel tanks and 5% in barrel. The wine was bottled after seven months on lees.
