Predominantly from two of Two Tonne’s own vineyards, with a splash of some Relbia fruit too. It was a good but challenging year all round, with super-low yields across all sites. The favoured parcels provided such small quantities that the decision was made pretty early not to make a Dog & Wolf Chardonnay in 2020. Good news for the TMV Chardonnay!
A mix of some whole-bunch from the super low-yielding 3 Wishes vineyard, and fruit from all the other cooler sites was destemmed, crushed and kept cloudy. Pretty much all the juice was fermented in puncheons. Naturally balanced in terms of acid, most of these had a tickle of sulphur post-primary and then were left on lees for the winter with a little stir every now and then. The last of the malo barrels finished naturally in spring. Everything was racked off lees to blend.
