The Full Moon vineyard and Chardonnay are perfect allies. When the right soil is married to the right grape, really cool things happen. This partnership can transcend all challenges and shines well above human interference. Our 2021 Salo Chardonnay celebrates this. This is our ninth year working with Simon Harte at the Full Moon Vineyard up in the Southern Hills of the Upper Yarra Valley. Simon tends old vines grown on chocolate, red coloured volcanic soils on a gentle west facing slope in Gladysdale. The mild season avoided major heat spikes and produced healthy canopies and strong vines that ripened plentiful fruit. Very slow, even ripening allowed the grapes to retain subtle, fresh flavours and remarkable acids. The resulting wines are pure, pretty and complex and will age incredibly well.
