Anyone with even a passing interest in cool-climate Australia will already know that Garagiste is one of the Mornington Peninsula’s brightest rising stars. The pristine Le Stagiaire Chardonnay fruit is from Garagiste’s Balnarring, Tuerong and Red Hill vineyards. The fruit is hand-sorted in the vineyard and winery then whole bunch pressed. The cloudy juice transferred to a mixture of new and old puncheons to ferment using only indigenous yeasts. Matured on its lees in barrel for nine months.
