“Cool, pure and elegant aromas are comprised by notes of green apple, lemon zest, iodine and tidal pool. There is very fine volume and mid-palate density to the tension-filled flavors that exude an almost pungent salinity on the clean, dry and sneaky long finish. Excellent quality for this level.” – Outstanding Top Value,Burghound
“The 2021 Chablis Boucheran has an expressive nose, well-defined with apple blossom and just a slightly oily note that lends complexity. The palate is well balanced with good weight, not overly complex but there is plenty of density on the finish that is very Chablis in style. This is well worth hunting down.” – 88-90 – Neal Martin, Vinous
They always had the vineyard however only bottled under their own Domaine in 2017. 0.9 hectares. Far more
white clay than the other plots between the 1er Cru hills of Vaillons and Le Foret as Eleni describes to me “In
between La Foret and Vaillons. Kimmeridgian with lots of white clay. Hard to work *she laughed*” North West
facing. Style – good mix, very mineral. 40 years old vines. Wild fermented in steel then Elevage in barrel for 12
months of 6 to 30 year old barriques.
