Dr Edge South Chardonnay 2020


I’m not sure any other region in Australia could produce a chardonnay like this. Unique? White flowers, custard, grapefruit, stone fruits and preserved lemon. Tight and tingly in the mouth, just ripe with some green apple, mouth watering acidity, Mediterranean herbs. Unbelievable. Waters Wine Co

Hand picked from the Meadowbank vineyard in the Derwent Valley. Wild fermented and matured 9 months in old oak barriques, some with no SO2, some with some whole clusters; unfined. Pete Dredge’s use of partial whole clusters during fermentation lends a flattering ginger beer character to his white wines, present here in front of chardonnay’s grapefruit, lemon and spicy white peach. Tight, glittering, slightly stark acidity coasts long through a finish of determination and endurance.
