Deeper core and more concentrated than the Petit Chablis. Finessed power, for all its depth; buoyant, layered, tensile and complex. Terrific width, that pushes to the outer reached of the palate with green apple, apple strudel, lime zest, wood spice and length. Fruit for the Gueguen Chablis is sourced from seven hectares of vines grown around Préhy, Chichée, Courgis and La Chapelle-Vaupelteigne. Fruit from the well-regarded lieux-dits of Malantes and Pargues (situated between the Montmains and Vosgros 1ers Crus) are also included in the mix. The vineyards mainly face southwest on Kimmeridgian soils with a layer of Jurassic clay and limestone littered with small oysters and fossils. Vinification and maturation occur in stainless steel, with regular lees stirring and full malolactic conversion.
