Special Chardonnay here, one for the purists. It’s really lovely to taste a wine made so traditionally, where the complexity and power of fruit is foremost. Bright and vivid bouquet of grapefruit, lemon zest, oyster shell, white flowers, almond and cream. Juicy and unctuous, round and palate coating and yet, focused and precise. White peach, apricot, grapefruit, mandarin, almond cream, seaweed and a talc like minerality. Remarkable integration of complex elements. The Denton Chardonnay block sits on our North Eastern slope and sees the softest morning light and is shielded from the hot afternoon sun. The granitic sand over granite boulders and long, slow growing season provide a very special and unique terroir. This unique micro-climate and soil profile contribute lots of freshness and mineral florals, framed by fine tannin and firm acidity. Our best Chardonnay fruit is selected to make this wine and only in the best vintages. Whole bunch pressed older French oak barrique and puncheon for wild yeast ferment and malo-lactic fermentation (100%). Left on full lees with occasional stirring for 6 months. Bottled without fining or filtration. The granitic soils of the vineyard are most evident here. Flint, talc, river stone, jasmine and citrus. Minerality is coupled with the gentle stone fruit and cut hay characters of this block. This Eastern slope catches softer light and always leaves the wines with high natural acidity and freshness. Vintage 2019 was a warmer, dryer year but probably the most elegant, fine wines we’ve made from a year like this, thanks in part to our amazing new winery which was a dream in it’s first vintage.
