One of the most generous and balanced Chablis every year. Youthful aromatics of dried herbs, gardenia flowers, green mango, lemon, white peach and preserved lime. As always with Christophe et Fils, there’s no trade off between fruit, ripeness, texture and minerality. Medium bodied, fleshy and ripe, with a textural sleekness and glide that really carries, before firming up to a rocky, saline close. Consistently excellent year after year after year, the 2023 Chablis is again at it’s crisp, incisive best! Very pure wine graced with good energy and grip in its bright fruit and long, elegant finish. Sebastien Christophe’s domaine and its vineyards are in the commune of Fyé, across the river from the town of Chablis. The hills are steep and overlook Les Clos, Blanchots and Montee de Tonnerre. Every aspect of the viticulture and vinification is thought out and effected with precision. The domaine no longer uses herbicides and vinifies entirely with natural yeasts.
The winemaking is pragmatic, wood employed to enhance Chablis’ subtle textures, flesh out the palate and soften the edges of the more powerful wines. The Petit Chablis and Chablis aged entirely in steel, the Vielles Vignes 20% and the premier crus 15%. There is nuance and fine detail in his wines that pleases the toughest connoisseurs and they are nicely concentrated thanks to Sebastien’s understanding of the importance of low yields.
