Bondar’s superb Chardonnay is made from fruit sourced from a single vineyard in Echunga in the Adelaide Hills. Hand-picked and lightly pressed straight to barrel sans sulphur. The juice is allowed to ferment naturally in french oak barrels (about 25% new) and two ceramic eggs for about ten months.
The 2019 vintage was a very light yielding one for Chardonnay in the Adelaide Hills, with crops up to 50% down in areas of the Rathmine vineyard. This is a beautifully balanced yet powerful wine, with intensity of fruit flavours.
