So often the Petit Chablis is richer and fuller than the Chablis, and more often than not better. Thankfully, this is not the case here and the wines complement each other so well. If the Petit Chablis is for oysters then the Chablis is for something richer in the main course. White peach, nectarine, lime and zest, jasmine and flint. Essence of Chablis. Much deeper and tighter than the Petit, with a scarf of savoury spice and minerals. Hinting texture, a touch of salt and tonic like herbs. Brooding and wonderful. Definitely for the main course! Racked six weeks ago. Pale lemon yellow. This is supple and stylish, with white fruit, easy on the attack yet still with good grip behind and a light iodine touch to accompany the white fruit. Good finish. Tasted: July 2021.  87-89 points, Jasper Morris MW, Inside Burgundy

 

Certified Organic. Defaix’s Chablis villages is drawn from four parcels of mature, 30-plus-year-old vines, situated around Milly and Poinchy, on the left bank of the Serein river. The wine is fermented wild, and aged on fine lees for ten months in glass-lined tanks.
