Sassafras’ 2019 Sparkling Chardonnay Savagnin Ancestral is made with Chardonnay grapes from Tumbarumba and Savagnin from Canberra. The Savagnin drives the aromatics and flavour of this wine with characters of white peach, lemon pith, tonic water and crisp apple.
Made by the Ancestral method, using the original grape sugars and yeast, it was carbonated in bottle. Like a bottle-conditioned ale or cider, there will be a small amount of yeast at the bottom, so chill upright and enjoy. Utterly delicious!
