100% chardonnay – Blanc de Blancs Bottled in May 2015. Fermented exclusively in oak barrels for about 10 months. Aged for 5 years on lees before disgorgement. Disgorged in August 2020. Dosage of 0 g/l (brut nature).
To the eye – Straw golden, the bubble is of vibrant shine and of great delicacy. To the nose – Aromas of red peach and fresh almond evolve discreetly towards white honey and peppery notes. On the palate – A lively and seductive wine with length maintained by racy acidity. The mineral finish opens up an elegant storm of white fruits and spices. 900 bottles released – 120 bottles in Australia neither fined, nor filtered.
