Impossible not to love this wine. Nose and palate of spiced plums, cherries, blueberry aniseed and charcoal. Succulent and juicy, with plenty of structure. Fresh ripe fruit is balanced perfectly with savoury, spicy notes. Drink now, but with years ahead of it. Absolute bargain. WWC, December 2018.
The 2016 Laughing Jack GSM is a Moppa blend of 53% old vine Grenache, 25% Shiraz and 22% Mourvédre. Each variety adds its own characteristics to the blend. Grenache, aromatic red fruits and spice, Shiraz, body and weight, while the Mourvédre adds structure and complexity. Imagine a delicious mix of berries – raspberry, blueberry and blackberry followed closely by aniseed, herbs and mixed spices with floral nuances of violet. The red fruits carry from the nose to the palate with earthy, savoury flavours. The Moppa Hill Mourvédre shines through adding back palate length and aniseed spice to this delicious wine.
The Shiraz and Mourvédre grapes were 100% destemmed while 22% of the Grenache remained as whole bunches before being transferred into open top fermenters. Fermentation was kept on the cooler side and hand-plunged twice per day with a rack and return to chillers for cooling only. After fermentation the wine was then drained to oak barrels and skins were hand-shovelled out of the fermenters into the basket press.
