Two Tonne Tasmania Dog and Wolf Pinot Noir 2020

The 2020 has come off the same vineyards as usual. From Three Wishes (the warmer of the two), the fruit saw 100% whole-bunch and a short maceration. Waverly, which was derelict when I took over, now produces wines with beautiful purity of fruit and more graphite in tannin structure. Considering 2020 was a very cool year, these vineyards were carefully managed in terms of yield, and this seems to have allowed lovely flavour at low alcohol potential. I erred on the side of caution with whole-bunch across the board, and so there’s only around 40% as a total inclusion in the end, making perhaps a finer expression of this cuvée versus the previous iterations.
