Light in colour, with scents of an English Summer. Sweet strawberry, raspberry and cherry, with star anise, clove and fennel seeds. Silky, sappy, supple and mineral, very gentle mouthfeel, but totally immersing the palate in flavour. Beautifully toned wine, the fruit so fresh and pure. Bright, light-medium depth red-purple hue, with pristine aromas of wild berry, mixed spices, red cherry and dried flowers and herbs, translating to refined intensity on the palate. Tightly tensioned, refined and long, with beautifully honed fine-grained tannins doing a great job of providing backbone and enhancing persistence. Wild ferments, gently plunged twice daily, then left on skins post ferment until the tannins aligned and pressed straight to barrel. 5% whole bunch. 10% new oak, mix of barriques, hogsheads and puncheons. 12 months in oak, 3 months in tank pre-bottling.
