An elegant, subtle, medium bodied Pinot with delicate red fruits and a cool, elongated finish. A touch of earth and spice with nutty tannins and well-balanced acidity. Burgundian! Each of the four blocks at Cooinda Vale were handpicked and hand sorted, then fermented separately. Fruit is destemmed only (no crushing) and inoculated for fermentation, which typically lasts for 10 days. This is followed by a post ferment maceration of 8-10 days. Bottled unfined and unfiltered.
