For all it’s “fun”, I can’t imagine opening this at a BBQ. It’s better than something to be sloshed about. Pretty and floral, with red fruits, 5 spice, very subtle wood and alpine herbs. Satiny texture, bright acidity and sleek expansiveness from the whole bunch. Puts on weight with time, but never loses it’s shape. Really quite lovely. Waters Wine Co

The fruit is sourced from the cooler north-eastern slope of the Denton View Hill. It’s 60% whole bunch and wild yeast fermented in open pots with gentle plunging. It rests on skins for two weeks before being pressed to old French oak and stainless-steel tank, where it rests for 5 months. It’s bottled in Spring without fining or filtration.
