Red and black cherries, cranberry, Asian spices, earthy notes and fine sappy tannin notes. Incredibly detailed, controlled and balanced. Beautiful wine. Absolute drop dead bargain.
The 2018 Appellation from Dappled is a blend of Pinot Noir from upper Yarra and Valley floor vineyards. Handpicked and cold soaked. The fruit is foot crushed with 30% whole bunches before being transferred to open fermenters. Fermentation occurs with wild yeasts. Only 15% new oak is used, the wine is bottled unfined and unfiltered, with minimal Sulphur only added at bottling.
