Our first Australian Gamay listed, and like everything from Sinapius, full flavoured and marches to the beat of their own drum. Darker than expected, a deep with an almost bloody and ferrous nose. Dustings of coal dust, lavender, violets and brambly fruit. Succulence, a feature of all Sinapius wine’s, bright and vital with a mash of red fruits (cranberry, strawberry, pomegranate and plum). The stems must have been super ripe, as there isn’t any “bunchiness”, rather a tangy width , broadening the palate and drawing the juice further. Pleasure, pleasure, pleasure. Waters Wine Co.
100% Estate Grown Gamay sourced from a high density planted vineyard (7700-11,111 vines/ha), planted in 2013. Gently handpicked to ensure all bunches remain intact, the grapes underwent traditional whole cluster carbonic maceration for 3 weeks, without any addition of sulfur. Matured in old barriques for 5 months, and bottled without fining and filtration.
Hand-picked, 3 weeks whole bunch carbonic maceration, wild fermented, 5 months in old oak, not fined or filtered, the first SO2 at bottling.
