Garnacha Tintorera and a small amount of Syrah are harvested at night, with the fruit going into stainless steel tanks where fermentation occurs naturally over around 20 days. Malolactic fermentation also occurs naturally, with the wine then resting for three months in old French oak foudres before bottling. Perez’s Venta La Vega Adaras Aldea 2019  is bright, vibrant and very pure – a small window into not only the vineyard, but also the minds behind the project. Organic, and vegan friendly.
