Phoenix is crafted entirely from Petit Manseng. The drying southerly Foehn wind allows for the late harvests and passerillé necessary to produce Jurançon’s moelleux wines. The 2020 Phoenix was picked in November, then naturally fermented and aged for eight months in used barrels.
With moderate residual sugar (of around 60 g/L), the racy Salharang style displays a terrific balance between moelleux-styled sweetness and punchy, ripe acidity. It’s discreet and fine yet luscious, with lemon barley, leatherbox honey and a twisty of funky lanolin. Finishing vibrantly, with waxy, honeyed perfume, this has the balance to match with savoury plates as well as lighter dessert dishes.
